Ingredients
  • 2 ½ lbs fryer chicken
  • 1 container buttermilk mixed with ¼ cup hot sauce
  • 3 eggs
  • ½ cup hot red pepper sauce
  • ⅓ cup water
  • ½ cup cornmeal
  • ½ cup potato buds
  • 1 cup self rising flour
  • ½ cup cracker meal
  • Peanut oil, for frying
For the Fried Chicken Seasoning:
  • 1 teaspoon chili powder
  • 1 teaspoon rubbed sage
  • 1 teaspoon finely crushed marjoram leaves
  • 2 teaspoons black pepper
  • 1 tablespoon onion salt
  • 1 teaspoon garlic powder
  • 1 teaspoon ground allspice
  • 1 teaspoon crushed basil leaves
  • 1 teaspoon celery salt
  • 1 teaspoon ground oregano
  • 2 tablespoons paprika
  • 1 teaspoon thyme
Instructions
  1. Marinate the chicken overnight in the hot sauce and buttermilk.
  2. Beat the water and eggs in a bowl, adding enough sauce to make the mixture orange.
  3. Mix the cracker meal, cornmeal, flour and potato buds in another bowl.
  4. Stir in some of the fried chicken seasoning mix and keep the rest in an airtight container for future recipes.
  5. Season the chicken with some more of the fried chicken seasoning, and then dip it in the flour mixture.
  6. Dip it in the egg and then in the flour mixture again.
  7. Heat the oil to 375 degrees F in a deep pan and fry the chicken until it is crispy and browned all over.
  8. Remember that dark meat takes longer to cook that white meat.
  9. White meat will take about 9 minutes to cook and dark meat will take 14 minutes.
