Ingredients
  • 1¼ cups all-purpose flour
  • 1 cup buttermilk
  • 1 quart milk
  • 1 beaten egg
  • 1 lb boneless beef top loin
  • ¼ teaspoon garlic powder
  • 2 cups shortening
  • Salt and black pepper to taste
Instructions
  1. Cut the meat crosswise into 4 cutlets and pound each one thinly with a moistened mallet or the side of a cleaver.
  2. Heat ½ inch of shortening In a skillet to 365 degrees F.
  3. While the shortening is heating, prepare the cutlets.
  4. Beat the egg with the buttermilk and a pinch each of salt and pepper.
  5. Mix the garlic powder and 1 cup of flour in another bowl.
  6. Dip the cutlets in the flour, turning to evenly coat both sides.
  7. Dip them in the egg mixture, coating both sides, then in flour mixture once again.
  8. Place the cutlets in heated shortening and cook until golden brown, turning once.
  9. Transfer them to a plate lined with paper towels.
  10. Repeat with the remaining cutlets.
  11. Drain the grease, reserving ½ cup.
  12. Using the reserved drippings in the pan, make a gravy over a medium heat.
  13. Blend in the last ¼ cup flour to form a paste then gradually add the milk to get the desired consistency, stirring constantly.
  14. For a thicker gravy add less milk; for a thinner gravy stir in more.
  15. Heat through, and season with salt and pepper to taste.
  16. Serve the gravy over the chicken fried steak.
