  • 3 lb frying chicken, cut into pieces
  • ½ cup grated parmesan
  • 1 cup flour
  • ¾ cup buttermilk
  • 4 tablespoons butter
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 1 teaspoon oregano
  • 1 teaspoon paprika
  • ½ teaspoon garlic powder
  1. Preheat the oven to 400 degrees F and line a 9 by 13 inch pan with foil.
  2. Put the butter in the pan and let it melt, without burning, in the oven.
  3. Rub the salt and pepper into the chicken pieces.
  4. Put the buttermilk in a bowl.
  5. Combine the rest of the ingredients in another bowl.
  6. Dip the chicken into the buttermilk then into the seasoned flour.
  7. Place the pieces skin side down in the buttered pan and bake uncovered for 30 minutes.
  8. Turn the chicken pieces over, turn the heat down to 300 degrees F and bake for another 20 minutes.
