  • 6 skinless boneless chicken breast halves - 6 oz each
  • 1 tablespoon Dijon mustard
  • 1 tablespoon butter
  • Salt and pepper to taste
  • ½ cup sliced almonds
  • 2 tablespoons orange marmalade
  • 3 tablespoons melted butter
  • 1½ cups whipping cream
  1. Melt 1 tablespoon of the butter in a skillet and stir in the almonds.
  2. Cook for 4 minutes or until brown and toasted.
  3. Put the chicken breasts between 2 sheets of plastic wrap or waxed paper and flatten using a meat mallet or rolling pin.
  4. Season with salt and pepper to taste.
  5. Melt 3 tablespoons butter in a skillet over a medium meat.
  6. Add the chicken breasts, and cook for a minute on each side.
  7. Combine the almonds with the cream, Dijon mustard, marmalade, red pepper flakes and chicken, stirring to blend.
  8. Cook for 10 minutes or until the sauce thickens.
