  • 1 x 2.5 lbs broiler-fryer chicken, in pieces
  • 1 cup all purpose flour
  • 1 cup buttermilk
  • ½ teaspoon pepper
  • ½ teaspoon salt
  • Oil for frying
For the Gravy:
  • 1 cup milk
  • 3 tablespoons all purpose flour
  • 1 ½ cups water
  • Salt and pepper to taste
  1. Put the chicken in a large dish.
  2. Pour the buttermilk over and chill in the refrigerator for an hour.
  3. Mix the flour, salt, and pepper together in a bag.
  4. Toss the drained chicken pieces, one at a time, in the flour mixture.
  5. Shake off any excess and put them on waxed paper for 15 minutes.
  6. Heat ¼ inch of oil in a skillet and fry the chicken until browned all over. Cover and simmer for 40 minutes or until the juices run clear, turning the chicken pieces occasionally with tongs.
  7. Remove the cover and cook for another 5 minutes.
  8. Remove the chicken and keep it warm.
  9. Drain all but ¼ cup of drippings and stir in the flour until the mixture is bubbly.
  10. Add the milk and a cup or a cup and a half of water. Cook and stir until thick and bubbly.
  11. Cook for one more minute and add more water if necessary.
  12. Season and serve with the chicken.
