Ingredients
  • 1 fryer chicken
  • 1 tablespoon chicken seasoning powder
  • 3 cups vegetable oil
  • 2 tablespoons melted butter
  • 1 teaspoon garlic salt
  • 1 tablespoon dried parsley
  • 3 cups all purpose flour
  • 1 teaspoon black pepper
Instructions
  1. Cut the chicken into serving sized pieces.
  2. Wash the pieces, and then pat them dry on paper towels.
  3. Stir the chicken seasoning, parsley, black pepper and garlic salt into the flour and coat the chicken pieces in this mixture.
  4. Add the oil and butter to a big, heavy skillet, making sure there is enough oil to cover at least half the chicken.
  5. Add the chicken and cook it for about 15 minutes per side, uncovered, or until it is browned and cooked through.
  6. Drain off any excess oil on paper towels and serve hot.
