Garlic Southern Fried Chicken

Garlic marinade and garlic coating.
Ingredients -
Chicken -
12 Skinless Chicken Pieces


Marinade -
1 - 2 cups Buttermilk
2 tablespoons Old Bay Seasoning
8 cloves Garlic, peeled and minced
2 teaspoon Salt

Coating -
3 cups Flour
1 tablespoon Salt
2 tablespoon Old Bay Seasoning
1 teaspoon Garlic Powder
½ teaspoon Fresh Ground Pepper
Lard, Oil, or Shortening for frying

 
Preparation:
In a food processor combine the buttermilk, garlic, Old Bay, salt and pepper and process until smooth. Place the chicken pieces in a plastic bag and pour in the buttermilk mixture. Seal the bag and refrigerate overnight.

Combine the flour with salt, Old Bay, garlic powder and pepper.

Remove the chicken from the marinade one piece at a time and coat with the seasoned flour.

Place the coated chicken pieces on a rack and refrigerate from 1 to 4 hours.

Heat a large heavy skillet over medium heat and add the lard, oil or shortening cooking it until it has completely melted. The fat should be about a ½ inch deep. When the oil is hot, about 350 degrees, carefully add the chicken pieces and fry until deep golden brown on all sides and cooked through, about 10 minutes per side.
