Genuine Southern Fried Chicken for Real Southern Taste

 
 
Sometimes nothing beats the flavor of real southern fried chicken and with this recipe, you could be serving up this delicious fried chicken tonight! Actually, make that tomorrow night because the chicken needs to be salted and left in the refrigerator overnight!

The salt is to pull out moisture, resulting in a firm yet still juicy chicken. Real southern friend chicken is firm and succulent and, with this recipe, this will become a family favorite. This real southern fried chicken is great with mashed potatoes and vegetables.

 

Real Southern Fried Chicken

 
 
Ingredients -
 
¼ cup butter
3 ½ lbs chicken, cut up
¾ cup all purpose flour
½ teaspoon black pepper
3 teaspoons salt
Vegetable oil
 
Preparation:
 

Sprinkle 2 teaspoons of the salt over the chicken pieces. Cover with wax paper and refrigerate overnight.

Pour an inch of oil into a heavy skillet. Add the butter. Heat to 375 degrees F.

Rinse the chicken. Put the flour, the rest of the salt and the pepper in a bag and shake. Add half the chicken and shake to coat. Repeat with the rest of the chicken.

Place the chicken in the skillet so the pieces do not touch.

Cook in batches if this is not possible.

Keep the cooked pieces warm in a 200 degree F oven.

Cook the chicken until golden brown all over, turning them once. This should take about 15 minutes.

Drain on paper towels and serve hot.
