Sprinkle 2 teaspoons of the salt over the chicken pieces. Cover with wax paper and refrigerate overnight.
Pour an inch of oil into a heavy skillet. Add the butter. Heat to 375 degrees F.
Rinse the chicken. Put the flour, the rest of the salt and the pepper in a bag and shake. Add half the chicken and shake to coat. Repeat with the rest of the chicken.
Place the chicken in the skillet so the pieces do not touch.
Cook in batches if this is not possible.
Keep the cooked pieces warm in a 200 degree F oven.
Cook the chicken until golden brown all over, turning them once. This should take about 15 minutes.
Drain on paper towels and serve hot.
