Ingredients -
3 lbs fryer chicken
½ cup milk
2 minced cloves garlic
1 teaspoon salt
¼ teaspoon poultry seasoning
1 cup all purpose flour
1 beaten egg
1 teaspoon paprika
Handful baby spinach, to serve
8 cherry tomatoes
1 teaspoon black pepper
Shortening, for frying
Preparation:
Cut the chicken into pieces.
Mix the garlic, egg and milk in a bowl and set this mixture aside.
Mix the salt, black pepper, paprika, poultry seasoning and flour in a Ziploc bag and add some of the chicken pieces.
Shake them well to coat.
Dip the flour-coated chicken pieces in the egg mixture and then once more in the flour.
Heat ¾ inch shortening to 365 degrees F in a big skillet over a moderate to high heat, then brown the chicken all over.
Turn the heat down to 275 degrees F and cook the chicken for another 30 minutes or until it is cooked all the way through.
Don't put a lid on the skillet.
Turn the chicken a few times during the cooking time.
Drain it on paper towels. Fry the cherry tomatoes for a few minutes or until they are hot.
