Ingredients -
2 large chicken fillets, no skin or bones
2 eggs
4 ½ oz flour
¼ teaspoon cayenne pepper
Salt and pepper to taste
2 burger buns
Mayonnaise
1 tablespoon vegetable oil
2 lettuce leaves
4 tomato slices
Preparation:
Cut the chicken fillets in half horizontally and place them in a freezer bag, one at a time, pounding with the smooth edge of a meat mallet or rolling pin to flatten.
Season with salt and pepper. Season the flour with the cayenne pepper and a teaspoon each of salt and pepper. Mix well.
Break the eggs into another bowl and lightly beat them.
Dip the chicken pieces into the egg; drain off any excess and then dip them into the flour.
Heat the oil in a skillet over a medium to high heat and pan-fry the chicken on one side for 3 or 4 minutes.
Turn over, turn the heat down to medium, and fry for 5 to 8 minutes on the other side or until the chicken burgers are cooked with no pink inside.
