Ingredients -
3 lb broiler chicken
½ teaspoon salt
½ cup all purpose flour
½ teaspoon paprika
¼ teaspoon black pepper
Vegetable oil
Preparation:
Wash the chicken, cut it into pieces and pat it dry.
Combine the salt, paprika, pepper and flour.
Put ¼ inch of vegetable oil into a big, heavy skillet and heat it up.
Dredge the chicken in the flour mixture, and then cook it in the oil for about 18 minutes over a moderate heat.
Turn the heat down to medium low, cover the skillet and simmer the chicken for about 35 minutes, letting it simmer until the chicken is cooked through.
Turn the chicken pieces a few times.
Take lid off for the last 5 minutes so the chicken goes crispy.
