Preparation:
Discard the wing tips from the chicken wings.
Either leave them whole or cut them at the joints to make smaller pieces.

Seal the bag and shake it to coat the wings. Marinate for 12 hours in the refrigerator.
Preheat the oven to 350 degrees F.
Drain the wings. Discard the orange marinade.
Preheat the oil to 400 degrees F and add the chicken wings to it, using a slotted spoon or wire basket.
Fry them for about 12 minutes or until they are golden brown and crispy.
You will probably need to fry the wings in batches.
Scatter the basil leaves over the chicken as a garnish and serve with the orange wedges.

Some fried chicken recipes are very simple combinations of chicken, flour, salt and pepper and others have a more complex flavor. Perhaps you have tried lemon chicken or orange fried chicken wings. If so, you will know that citrus and chicken are a heavenly combination. Chicken has a very mild, soft flavor which is great with all kinds of flavors from sweet to sharp and from creamy to spicy. Whether you use orange, lemon or lime juice with the chicken, you can be sure to get a very flavorful fried chicken recipe. Take care not to over the citrus, of course, because it has quite a strong taste.
Citrus juice can be poured over the chicken before you fry it or you can marinate the chicken in the citrus juice and perhaps some other ingredients. If you are going to marinate the chicken, pay careful attention to the times mentioned in the recipe. Marinating chicken in citrus juice for too long can over-tenderize the chicken and make it mushy, which is not the result you will want. Orange fried chicken wings, lime-marinated Mexican chicken or Chinese lemon chicken are special recipes which can be served at any occasion, from a casual family dinner to a buffet or dinner party.
