Ingredients -
4 lbs chicken, cut into pieces
1 teaspoon baking soda
3 cups self rising flour
3 tablespoons white sugar
2 tablespoons paprika
1 ½ oz package onion soup mix
1 package Italian salad dressing mix
1 cup cornstarch
¼ cup cold water
3 cups crushed cornflakes
½ oz package spaghetti sauce mix
3 tablespoons seasoned salt
Corn oil, as needed
2 beaten eggs
Preparation:
Preheat the oven to 350 degrees F.
Mix together the salt, cornstarch, flour, baking soda, paprika, sugar, spaghetti sauce mix, onion soup mix and salad dressing mix.
Mix the water with the eggs.
Put 1 inch of corn oil in a skillet and heat it.
Grease a 13 x 9 inch baking pan. Dip the chicken pieces first into the dry coating mix, then into the water and egg mix and finally into the cornflakes.
Dip them once more into the dry mix, then drop them skin side down into the hot corn oil.
Brown the chicken for about 3 minutes, then turn it over and brown the other side. It is better to fry in batches than crowd the skillet.
Put the browned chicken pieces in the greased baking pan skin side up, in a single layer.
Wrap aluminum foil over the top, making sure 3 sides are sealed and the last side is open so steam can escape.
Bake for about 35 minutes, then remove the foil and bake for 5 more minutes to make the coating crispy.
