How to Marinate Chicken

Marinating chicken gives it a wonderful flavor and, depending which ingredients you use to marinate the chicken, you can also tenderize it in this way. Boneless, skinless chicken breasts are especially good for marinating. If you use an acidic marinade, once which is based on yogurt, vinegar, lemon juice or lime juice, this tenderizes the meat. Add some fruit or mustard, herbs or spices and some salt and pepper and you have a tasty chicken marinade. Use fresh herbs if you can. If you have dried herbs, rub them between your fingers before adding them to the marinade, to release the aromatic oils. Half acid and half oil is a good chicken marinade combination.

Tips for Chicken Marinades

Marinate the chicken in a Ziploc bag, by first adding the marinating ingredients, then adding the chicken. Refrigerate it if the marinating time is more than an hour. Follow the recipe carefully because some chicken recipes call for a longer marinating time. You don't have to wipe the excess marinade off the chicken before you cook it but you should discard the marinade after taking the chicken out, for safety reasons.
